1/2 tsp canola
1 oz goat cheese (I used Caprano)
1 jarred roasted whole red pepper
few snips basil
1 slice whole wheat toast
1sp buttery spread
Scramble egg with 1/2 oz goat cheese in a nonstick pan coated with 1/2 tsp canola.
Gently stuff scrambled egg into opening of roasted red pepper and top with remaing goat cheese and basil.
